What you will do in your working day

In the first instance you will be taught about Health & Safety and food hygiene.  You will then be trained in all aspects of traditional butchery, to include:

  • Carry out a range of primary and secondary butchery skills involving the use of steak and boning knives, hand saws, cleavers, banding needles and other relevant hand tools used in the process of primal cutting, boning, slicing, dicing, rolling, trimming and filleting. 
  • Produce meat and poultry products such as pies, burgers and added value products.
  • Smoke and cure bacon
  • You will also learn vacuum packing, wrapping and labelling of products.
  • You will be required to keep the butchery area clean and eventually be trained in customer service

The training you will be getting

You will attend Sparsholt on a day release basis during term time, where you will achieve:

  • Level 2 Butcher Standard 
  • Level 2 Diploma in Professional Butchery
  • Level 2 Food Safety Award
  • Level 2 Health & Safety in the Food Supply Chain Award
  • Level 2 Knife Skills Award 
  • Apprentices without level 1 English and mathematics will need to achieve this level and take the test for level 2 English and mathematics prior to taking the end-point assessment.
