The apprentice will receive £8 - £10 per hour depending on age, with opportunities for pay reviews based on performance, skill development and progression within the bakery.

Typically, 5 days per week, including some weekend shifts. Usual hours fall between early morning bakery starts and daytime production, for example 7am-3pm or similar shift patterns. Exact working hours will be agreed with the successful apprentice.

Work

Most of your apprenticeship is spent working. You’ll learn on the job by getting hands-on experience.

What you'll do at work

This apprenticeship provides hands‑on training in artisan bread, pastries and bakery production. Working within a real bakery team, the apprentice will learn practical skills, food safety, preparation, shaping, baking and finishing while gaining a nationally recognised Level 2 Baker qualification.

What you'll learn

Course contents
  • Select, prepare/set-up and use equipment and machinery.
  • Clean and check tools and equipment.
  • Monitor materials/stock levels and controls for example, first in first out, temperature and environment.
  • Receive and store materials/stock from external suppliers and/or internal stores.
  • Store finished goods.
  • Package and label bakery products for example, allergens.
  • Comply with health & safety, food safety, environmental procedures, PPE, hygiene and method statements.
  • Clean and tidy work area. Dispose of waste and recycle.
  • Communicate verbally for example, with colleagues, suppliers and customers.
  • Record information - paper based or electronic.
  • Identify bakery product problems/faults and underlying causes.
  • Read and interpret information for example, specification, recipe and production plan.
  • Plan bakery tasks.
  • Prepare for bakery tasks. Obtain materials.
  • Prepare ingredients.
  • Weigh or check weight of ingredients/products.
  • Mix ingredients.
  • Deposit, scale or cut/divide mixture.
  • Mould products.
  • Monitor prove.
  • Pre-bake and/or post-bake dressing of product.
  • Operate ovens.

Training schedule

The apprentice will complete the Level 2 Baker Apprenticeship, gaining a nationally recognised Level 2 Baker qualification at the end of the programme. Training will be delivered by Yeovil College, with attendance required one day per week at the college alongside workplace learning throughout the rest of the week.

GCSE in:

  • English (grade Grade 9 – 4 / A* - C)
  • Maths (grade Grade 9 – 4 / A* - C)

Other requirements

  • You MUST be prepared to commit to your work and training for the duration of the apprenticeship. You may be required to have a telephone conversation with Yeovil College prior to your application being passed on. If a suitable candidate is found prior to the advertised closing date, it may close earlier so please apply early to avoid disappointment
  • Ability to travel independently between Bridport (workplace) and Yeovil (college) is essential, due to early bakery start times and weekly college attendance

After this apprenticeship

On successful completion of the apprenticeship, the apprentice may progress into a permanent Baker role within the business, taking on increased responsibility for production, product development and daily bakery operations. With experience, there are opportunities to move into senior baker, section lead or supervisory positions, and to develop specialist skills in artisan bread, pastries or production planning.
