Working for award winning family bakers in Somerset which has been an integral part of Glastonbury’s heritage for over 40 years. Burns the Bread proudly operates 6 shops across the region. This apprenticeship provides hands on training in bakery production working within a team to provide high standard products for our shops.

Work
Most of your apprenticeship is spent working. You’ll learn on the job by getting hands-on experience.
What you'll do at work
- Assist with daily production of breads and pastries for our shops
- Follow food safety, hygiene and allergen procedures to maintain a compliant bakery
- Support the team with preparation, setting up bakery and maintaining equipment
- Learn and apply different techniques under supervision
- Carry out stock rotation, labelling and cleaning routines

What you'll learn
Course contents
- Select, prepare/set-up and use equipment and machinery.
- Clean and check tools and equipment.
- Monitor materials/stock levels and controls for example, first in first out, temperature and environment.
- Receive and store materials/stock from external suppliers and/or internal stores.
- Store finished goods.
- Package and label bakery products for example, allergens.
- Comply with health & safety, food safety, environmental procedures, PPE, hygiene and method statements.
- Clean and tidy work area. Dispose of waste and recycle.
- Communicate verbally for example, with colleagues, suppliers and customers.
- Record information - paper based or electronic.
- Identify bakery product problems/faults and underlying causes.
- Read and interpret information for example, specification, recipe and production plan.
- Plan bakery tasks.
- Prepare for bakery tasks. Obtain materials.
- Prepare ingredients.
- Weigh or check weight of ingredients/products.
- Mix ingredients.
- Deposit, scale or cut/divide mixture.
- Mould products.
- Monitor prove.
- Pre-bake and/or post-bake dressing of product.
- Operate ovens.

Training schedule
The apprentice will complete the Level 2 Baker Apprenticeship, gaining a nationally recognised Level 2 Baker qualification at the end of the programme. Training will be delivered by Yeovil College, with attendance required one day per week at the college alongside workplace learning throughout the rest of the week.

Desirable qualifications
GCSE in:
- English (grade Grade 9 – 4 / A* - C)
- Maths (grade Grade 9 – 4 / A* - C)

Other requirements
- Apprentices must either already have GCSE English and maths at Grade 4/C or above or they must work towards Functional Skills as part of the programme
- Ability to travel independently between Glastonbury (workplace) and Yeovil (college) - Essential, due to early bakery start times and weekly college attendance

After this apprenticeship
On successful completion of the apprenticeship, the apprentice may progress into a permanent Baker role within the business.
