Summary

This apprenticeship provides hands‑on training in artisan bread, pastries and bakery production. Working within a real bakery team, the apprentice will learn practical skills, food safety, preparation, shaping, baking and finishing, whilst gaining a nationally recognised Level 2 Baker qualification.

  • The apprentice will receive £8 - £10 per hour depending on age, with opportunities for pay reviews based on performance, skill development and progression within the bakery.

Hours
Typically, 5 days per week, including some weekend shifts. Usual hours fall between early‑morning bakery starts and daytime production, for example 7:00am–3:00pm or similar shift patterns. Working hours will be agreed with the successful apprentice.

Work

Most of your apprenticeship is spent working. You’ll learn on the job by getting hands-on experience.

What you'll do at work

  • Assist with daily production of breads, pastries and baked goods, including mixing, shaping, baking and finishing.
  • Follow food safety, hygiene and allergen procedures to maintain a clean and compliant bakery environment.
  • Support the team with preparation, weighing ingredients, setting up workstations and maintaining equipment.
  • Learn and apply bakery techniques under supervision, developing confidence with dough handling and production processes.
  • Help with stock rotation, labelling, cleaning routines and general bakery organisation.

What you'll learn

  • Identify bakery product problems/faults and underlying causes.
  • Read and interpret information for example, specification, recipe and production plan.
  • Plan bakery tasks.

Training schedule

The apprentice will complete the Level 2 Baker Apprenticeship, gaining a nationally recognised Level 2 Baker qualification at the end of the programme. Training will be delivered by Yeovil College, with attendance required one day per week at the college alongside workplace learning throughout the rest of the week.

GCSE in:

  • English (grade Grade 9 – 4 / A* - C)
  • Maths (grade Grade 9 – 4 / A* - C)

Other requirements

  • Apprentices must either already have GCSE English and Maths at Grade 4/C or above or they must work towards Functional Skills as part of the programme.
  • Ability to travel independently between Bridport (workplace) and Yeovil (college) is essential, due to early bakery start times and weekly college attendance.
  • Any food‑related or hospitality qualifications are desirable but not required.

After this apprenticeship

On successful completion of the apprenticeship, the apprentice may progress into a permanent Baker role within the business, taking on increased responsibility for production, product development and daily
bakery operations. With experience, there are opportunities to move into senior baker, section lead or supervisory positions, and to develop specialist skills in artisan bread, pastries or production planning.
