What you will do in your working day

You will work with experienced chefs and a highly experienced Head chef who will guide and train whilst working in our brigade. Duties will include:

  • Prep dishes
  • Cook certain dishes and plate up from scratch with training
  • Work with our chefs in executing dishes for banqueting
  • Be part of the team in producing high end dishes for restaurant

The training you will be getting

  • The apprentice will be working towards the Level 2 Production Chef Apprenticeship Standard
  • College attendance will be at the Colchester Institute - Colchester Campus one day per week during term time

What to expect at the end of your apprenticeship

  • The apprentice could progress into becoming a Chef de Partie.

Start date could be earlier than specified depending on the applicant's availability. This is a countryside venue, please check that you will be able to travel to the venue's location before applying. The apprentice will be eligible for a staff discount and share of all gratuities.

About the employer

Downham Hall has been around for hundreds of years, for most of it's time as a large residential home to wealthy families, including the de Beauvoirs and descendants. All that has changed in 2017 when the conversion towards a Boutique Hotel and Venue commenced. Today and several hard years of work we have come a long way, have further to go, but continue our passion to create a destination for all sorts of reasons. We have weddings, business travellers, wakes, holiday makers, people with healthy appetites and locals all using our venue. The building is contemporary inside, with simple, elegant dining spaces and 5 individually designed bedrooms which are comfortable and yet also luxurious, offering the perfect place for foodies, leisure guests, business guests and special celebrations. Christina and Andrew Metcalfe manage the venue including day to day business and the finances. Downham Hall has 15 full-time staff plus part-time staff in addition. It is based in the countryside near Billericay.
