What will the apprentice be doing?

You will be learning to:

  • Run your own section
  • Manage your time carefully
  • Complete your work to exacting standards with the guidance from experienced chefs

Duties include:

  • Food preparation including basic knife skills
  • Working alongside trained chefs to gain cooking skills and knowledge
  • Making sure the kitchen is clean, tidy and free of hazards
  • Plating up meals in a presentable and creative manner in line with menu specifications
  • Getting food out to customers in a timely manner

Training on all sections of the kitchen as well as:

  • Food hygiene
  • Stock rotation
  • Menu planning
  • Costing

What training will the apprentice take and what qualification will the apprentice get at the end?

The apprenticeship training is delivered through a combination of workplace learning and regular college attendance. This training will teach you the knowledge, skills and behaviours set out in the Commis Chef Level 2 standard. On completion the apprentice will receive Commis Chef Level 2 qualification. Functional Skills in maths and English may also be required depending on current level.   

What is the expected career progression after this apprenticeship?

We are always on the lookout for the right employees who meet the high standards we require. The successful apprentice will undoubtedly be considered for full-time employment at the end of their apprenticeship.

Our 8 bedroomed 18th century coaching Inn and restaurant is open every day of the year and combines original flair with exposed steel beams, open fire, cosy nooks and crannies and pretty garden. We are very much a locals’ pub, welcoming familiar faces into our watering hole to sit, chat, eat and drink in these beautiful surroundings. Equally we love to see new faces who might be visiting this beautiful county – looking for their own ‘escape to the country’. The area is superb for walks across the fields or along the World Heritage Site of the Jurassic Coast. The town hosts many antique shops and auction houses, too. So as a lunch stopover, or overnight stay en-route to Devon and Cornwall, or a destination in itself, The Crooked Swan is the perfect spot.
