Well now is the time, as we have a very exciting opportunity for an Apprentice Commis Chef to join our team at Compass Group UK&I, London. Over a 12–15-month period, you will be trained to become a fully Qualified Commis Chef. Based in one of our busy kitchens you would learn the different sections within the kitchen, gain experience with food preparation, cooking techniques and work safely within HSE guidance.

What will the apprentice be doing?

Tasks could include, but not limited to:

  • To prepare and cook sufficient food to provide the agreed amount of customer choice with minimum wastage with the full support of colleagues and senior chef
  • To ensure all food preparation is carried out in accordance with food hygiene procedures
  • To ensure food is prepared to require standards checking for taste, presentation and quality - (appropriate for hospitality or staff dining)
  • To ensure food is served promptly and work is carried out quickly and efficiently to keep up when busy under supervision from the senior team
  • To ensure all food sent out is correctly garnished
  • To ensure portion control, preparation and storage methods avoid wastage and keep down costs
  • To assist in the completion of relevant paperwork reproduction and wastage sheets, cleaning records, etc
  • To ensure the kitchen and service area are clean, tidy and attractive during service
  • Perform other general tasks to support effective food service delivery as reasonably requested such as:
    • Baking
    • Service
    • Stocktaking
    • Moving Stock

There is no supervision of other staff.

What training will the apprentice take and what qualification will the apprentice get at the end?

Alongside your day-to-day duties, you will complete the Commis Chef Level 2 Apprenticeship. This is a nationally recognised qualification, and the primary objective of the Commis Chef is to learn and understand how to carry out the basic functions in every section of the kitchen. You will either be attending college 1 day per week or you will learn ‘in-unit’.

You will be supported through this qualification by your Personal Development Coach who will visit you at your place of work every 6-10 weeks. You will also attend 6 workshops including an Introduction Day at a location outside your normal place of work. All travel expenses will be covered by your employer.

You are not expected to complete any of your Apprenticeship work outside of your normal working hours and will be given a set time each week to complete your work.
