What will the apprentice be doing?

  • Check food stocks, report on shortages, prioritise food that is close to expiry and keep the storage areas in good order
  • Contribute to reviewing and refreshing menus in line with business and customer requirements
  • Work methodically to prioritise tasks, ensuring they are completed at the right moment and to the required standard
  • Complete preparation and cooking tasks to a high standard, delivered on time and presented as described within the recipe specification
  • Work effectively with others to ensure dishes produced are of high quality, delivered on time and to the standard required
  • Support team members to produce dishes and menu items on time to quality standards
  • Follow safe working practices when storing, preparing, and cooking ingredients to maintain their quality and safety
  • Work methodically to prioritise tasks, ensuring they are completed at the right moment and to the required standard

Level 2 Commis Chef Apprenticeship.

One day a week college attendance required at Leicester College Freemans Park Campus, throughout the course of this apprenticship.

What is the expected career progression after this apprenticeship?

The natural progression from commis chef is to demi-chef de partie, chef de partie (section chef) and then onwards and upwards to sous chef and head chef.

The Axe & Square is in the village centre of Countesthorpe, Leicester and has been a pub for at least 120 years.
