What will the apprentice be doing?

  • Making sponge in different shapes, sizes and flavours 
  • Making pastry - shortcrust and choux
  • Chocolate work - tempering, decoration etc.
  • Recipe development 
  • Pastry fillings - cream in different ways, buttercream, ganache, glazing, creme patisserie
  • Piping 
  • Sugar work 
  • Desserts - cheesecakes, tiramisu etc.
  • Sweet dough 
  • Use of equipment 
  • Scones 
  • Maintaining a hygienic workplace 
  • Time management
  • Stock ordering and stock check 
  • Savoury baking - sausage rolls, pies, savoury pastries etc.
  • Helping design seasonal and themed items 
  • Bulk fermentation - tinned loaves, bloomers, rolls
  • Long fermentation - e.g., sourdough 
  • Italian style breads 
  • Enriched doughs - e.g., brioche
  • Moulding and shaping 
  • Usage of yeast 
  • Upkeep of sourdough

Production Chef Level 2. 

Shrubbs Farm, Sheering, CM22 7LL - on job site. 

One day a week.

Full-time employment in either section of the bakery.
