What will the apprentice be doing?

The role is split into 5 primary key areas: 

1. Preparing vegetables with knife work 

The apprentice will be learning the safety on how to hold, sharpen, use correct knife and store knifes. We will teach them different knife skills like dicing, slicing, chiffonade and brunoised.

2. Cooking techniques 

The apprentice would learn a variety of cooking techniques which they will be able to adapt to different food groups. Some of the cooking techniques will be grilling, roasting, blanching, sauté, poaching, braising and baking.

3. Cleaning/ food safety 

The apprentice will be required to understand the cleaning procedures with our cleaning schedule. The schedule has details of all the equipment that is required to be cleaned on how to clean, what PPE is required and what chemicals to use. COSSH training is also undertaken. The apprentice will also understand the safety around cleaning when preparing and cooking in the kitchen

4. Rolling fresh pasta 

The apprentice will learn how to make a fresh pasta dough and to understand how to fold and roll the pasta dough to either a filled pasta(ravioli) or a straight pasta(fettuccine). The apprentice will also learn how to make the fillings for each pasta. 

5. Measurements for baked goods and pastry 

Measurements in the kitchen are important and will need to learn the baked goods we have on offer in the restaurant. The apprentice will learn how to measure and separate each ingredient for the pastry section. Baking focaccia, preparing gelato for churning, baking sponge, chocolate fondants and sorbets.

What is the expected career progression after this apprenticeship?

We will be able to offer a 6 month contact to successful apprentice as a commis chef with room to extend.
