What will the apprentice be doing?

The role of Commis apprentice gives you the opportunity to learn all aspects of working with fresh food, working as part of a team, developing personal confidence and becoming part of the MTT family.

Day to day tasks and responsibilities include:

  • To assist the head chef and team in the day to day running of the kitchen. This can include cooking a range of foods, plating up dishes and cleaning/ kitchen operations.
  • To work to safe and legal practices and to learn more about these practices within the workplace and through your apprenticeship.
  • To ensure the high standards of food safety, cleanliness and professionalism are always kept.
  • To ensure all products entering and leaving the kitchens are to the highest of standards, these standards will be shared with you through the kitchen team.
  • To work with the team to set standard operating procedures.
  • To track, replenish and keep in date order the stock holding.
  • To be pro-active in all actions and tasks set for you.

During your apprenticeship you will learn:

  • Food Hygiene
  • Health and Safety
  • Knife skills
  • Basic preparation of vegetables, meats and fish.
  • Once these skills are mastered then you can move onto stove work
  • Learning all the various cooking techniques, such as grilling, pan work, frying, poaching and roasting.
  • Learning people skills and maintaining personal and kitchen hygiene.

There will be two other experienced chefs working to train you along with support and development from our Head Office Food Team manager and Food Development chef. We also have part- time kitchen porters in the kitchen who are usually younger people from college or university.

In no time at all, with dedication and a good attitude you could find yourself running a section of the kitchen during food service and feeling the excitement of cooking to order for our guests.

What training will the apprentice take and what qualification will the apprentice get at the end?

  • Functional Skills in Maths and English (if required)

You will be supported by a HIT Training Professional Trainer.

What is the expected career progression after this apprenticeship?

On completing the course we would be able to offer a full-time position. This would be in the location you have trained in or have the chance to work in one of our other sites.

We aim to promote in house and should you wish to progress with MTT we are always looking for new sites to purchase and there would be opportunities to move to Second and Head Chef level within 2-3 years.

MTT are well established pub operator in West and North Yorkshire along with sites in Liverpool and Chester. We can therefore offer job security as part of a large company. We operate our pubs independently, so each pub has input in the menu and how the food operation is targeted.
