What will the apprentice be doing?

  • As a Commis Chef your responsibilities will include (full training to be provided):
    -Working closely with the Head Chef and Chef brigade, following recipe specifications.
    -To clearly label and rotate stock including allergen information.
    -To ensure that the food produced is of the highest possible standard.
    -Working in an organised manner and cleaning as you go. All areas are to be always maintained to the highest standards of hygiene and cleanliness.
    -To ensure that all food is prepared within the dedicated time frame.
    -To assist the team with stock management, cleaning fridges, rotating stock and stock counting.
    -Producing dishes using correct measurements/portion sizes according to dish specifications.
    -Follow food preparation guidelines meeting The Muddy Duck requirements.
    -Assisting the team with the receipt and storing of deliveries.
    -To always be dressed in the correct PPE for the working environment.
    -We would like someone who has a passion for food and learning. -The right person will be enthusiastic and willing to contribute ideas to menus.

What is the expected career progression after this apprenticeship?

The individual can develop through the kitchen brigade at The Muddy Duck (Absolute Taste) or we have many opportunities within the wider business such as our Eurostar, Private Aviation and Events kitchens.   A permanent and full-time role would be the goal for both the individual and the company.
