Broad training in butchery and sausage making skills including.  Hygiene ,  cleaning,  stock handling /rotation.

Identification of different meat cuts and methods of cutting for different animal carcases, observation at first then basic knife skill leading to whole carcase cutting for retail sale.

Assisting other members of staff and learning from them.

  • None required but Maths, English, Catering and I.T. would be useful.
