The successful candidate will be working towards the Level 2 Commis Chef Apprenticeship Standard.

You will also work towards Functional Skills Level 2 in maths and English if required.

You will develop the Skills, Knowledge and Behaviours expected of a Commis Chef which includes:

  • Identifying the factors that influence the types of dishes and menus offered by businesses
  • Recognising and understanding sources and quality points of common food groups and commodities
  • To be able to identify traditional cuts of; and basic preparation methods for, meat, poultry, fish and vegetables (including French terminology)
  • To be able to maintain a clean and hygienic kitchen environment at all times, as well as complete kitchen documentation as required
  • Take pride in your own role through an enthusiastic and professional approach to tasks
  • Have an understanding of correct professional behaviours and organisational culture
  • Understand the basic costing and yield of dishes and the meaning of gross profit

Off the job training will be provided, where you will have the time to complete your portfolio work, attend off job training seminars and have allocated time for mentoring and being shadowed.
