THE PIG is all about the walled garden. Everything is driven by the gardener, forager and chef - we grow and find the food, our chef then creates the 25-mile menu (what we can't get from our garden and grounds is sourced locally). This immediacy from garden to plate is THE PIG's trademark! Our menu changes by the minute depending on what the forager finds or the kitchen gardener deems to be in perfect condition. This is a genuine way of running our kitchen and as our Apprentice Chef you will have a unique opportunity to work as part of this award-winning team learning your trade from some of the best in the industry.

Within this role you will look at:

  • Seed rotation
  • Bee-keeping
  • Animal husbandry
  • Charcuterie
  • Foraging
  • Aspects of the smoke house and wood oven
  • As well as doing more traditional chef duties

About the employer

We have 27 rooms, 17 in the main house and 10 in the stable yard. The bedrooms in the main house are spacious and classic PIG style with far reaching views. The new additions here are the three rafter rooms in the previously unused attic spaces. We have 10 new stable yard bedrooms converted from the old stables and coach houses – these retain much of the original features, partitions and even flooring and tiling. There’s a saying in Devon that ‘if you stick your finger in the ground it will grow’, and the kitchen garden is the beating heart of our new addition. The difference here is there are 3 walled gardens - the vegetable garden, the herb garden and the infusion garden. Thanks to THE PIG-at Combe’s location being 8 miles from the coast the menu will consist of fresh fish as well as the very best Devonshire cheese and locally reared meat from butchers around the market town of Honiton. As with the other PIGs, what cannot be grown in THE PIG’s kitchen garden will be sourced within a 25-mile radius
