THE PIG is all about the walled garden. Everything is driven by the gardener, forager and chef - we grow and find the food, our chef then creates the 25-mile menu (what we can't get from our garden and grounds is sourced locally). This immediacy from garden to plate is THE PIG's trademark! Our menu changes by the minute depending on what the forager finds or the kitchen gardener deems to be in perfect condition. This is a genuine way of running our kitchen and as our Apprentice Chef you will have a unique opportunity to work as part of this award-winning team learning your trade from some of the best in the industry.

Within this role you will look at:

 

  • Seed rotation
  • Bee-keeping
  • Animal husbandry
  • Charcuterie
  • Foraging
  • Aspects of the smoke house and wood oven
  • As well as the more traditional chef duties.  

 

You must clean and presentable and have a passion for cooking.

Future prospects

Although this opportunity starts with an intermediate apprenticeship there is an expectation that candidates will progress onto an Advanced and Higher Apprenticeship. You can have the opportunity to gain a full time career with The Pig and progress within the company.

Things to consider

You will be working weekends and evenings, the kitchen can be hot and fast paced. Apprenticeship National Minimum Wage (ANMW): From 1st October 2016 The National Minimum Wage (NMW) rate for apprentices is £3.40 per hour. From April 2017 this rises to £3.50 per hour. This applies to 16-18 year old apprentices and those aged 19 and over in the first year of their Apprenticeship. For all other apprentices the National Minimum wage appropriate to their age applies. About the employer

Our 30 bedroom country house in Brockenhurst is original, relaxed and sitting comfortably within its environment. It isn't perfect! But it's comfy, interesting and homely with muted colours, evolved rather than interior designed. The kitchen is overseen by Chef James Golding and Head Chef Dan Gover whose two key lieutenants aren't their sous chefs but forager and kitchen gardener. Uncomplicated and simple British garden food, true to the micro seasons and influenced by the forest and coast, with the emphasis squarely on fresh, clean flavours.
