Duties will include:

  • Reports directly to his Sous chef
  • Prepare menus in collaboration with colleagues (after training)
  • Ensure adequacy of supplies at the cooking stations
  • Prepare ingredients that should be frequently available (vegetables, spices etc.)
  • Follow the guidance of the Executive or Sous chef and have input in new ways of presentation of dishes
  • Put effort in optimizing the cooking process with attention to speed and quality
  • Enforce strict health and hygiene standards
  • Help to maintain a climate of smooth and friendly cooperation
  • Assisting with stock rotation Cleaning stations
  • Learn the Public Health regulations and procedures and adhere to these standards at all times
  • Attends various training session with the aim to further improve his/her level of performance
  • Assist with ensuring that each area is ready for service. [15 min prior to advertised timings]
  • Assist with set-up, service and break down duties linked to each area and as advised by managers
  • Follow all relevant health department regulations pre, post or during services
  • No eating or drinking in the Kitchen as in Public Health standard

Requirements and prospects

Desired skills

  • Level 2 Food Safety Awards
  • Proven experience in a Chef de Partie role will be advantageous or Commis Chef
  • Excellent use of various cooking methods, ingredients, equipment and processes
  • Ability to multitask and work efficiently under pressure
  • Knowledge of best cooking practices
  • Culinary school diploma
  • Awareness of manual handling techniques
  • Awareness of Control of Substances Hazardous to Health

Personal qualities

  • Confident and able to organise a team and kitchen
  • Must be able to balance a full time role with working towards your qualification

Desired qualifications

  • NVQ Level 1
  • Level 2 Health and Safety in the Workplace Award
  • Level 3 Food Safety Awards (if not will work towards)

Future prospects

A role will be given on completion of the apprenticeship.

In a traditional 17th century inn set among rolling farmland, The Ostrich Inn provides Bed and Breakfast accommodation with independent access to the comfortably decorated rooms, two of which feature king-size beds. The restaurant menu changes to reflect seasonal local produce while the bar offers a range of CAMRA recommended ales. Breakfast is a comprehensive continental selection delivered to the room. The 13th century Church of St Mary is noted for a beautiful hammer beamed roof decorated with carved angels. Bloodgate Hill is a rare example of an Iron Age Norfolk fort and is open to the public.
