As an Apprentice Chef at the Churchill Arms you will train under the direct control of the Head Chef/ Owner. Nick has worked and trained under some of the greatest and most well-known Chefs in the country and has outstanding skills to pass on to you.

At first you will assist the Chefs in preparing and cooking this exciting menu and as you grow in confidence and ability you will be asked to run a section in the kitchen.

The Churchill prides itself on maintaining the highest possible hygiene standards as so all chefs are expected to work to maintain this including regular deep cleans of the kitchen.

 

Day to day duties will include:

  • Working under the direction of the senior Chefs
  • Preparation of fresh locally sourced produce
  • Developing a range of techniques and culinary skills

As your skills develop:

  • Mise en place (preparation before service)
  • Running a section during Lunch and dinner service
  • Assisting with Menu development

Duties shared with all the kitchen brigade include:

  • Maintaining the highest standards of hygiene at all time
  • Stock control and rotation
  • Deep cleaning as required

Qualifications required

Ideally GCSE Grade C and above for English and Maths but Functional Skills qualifications are available in these subjects to complete the framework

The Churchill Arms is located in the beautiful Cotswold countryside but is not served by public transport – live-in accommodation is available Apprenticeship National Minimum Wage (ANMW): The National Minimum Wage for Apprentices is £3.40 per hour from 1st October 2016. This is the legal minimum pay per hour applying to 16-18 year old apprentices and those aged 19 and over in the first year of their apprenticeship. For apprentices 19 or over who have completed their first year and are continuing their apprenticeship, the National Minimum wage appropriate to their age applies.

Family and local life are at the heart of this pub which serves firm British classics. Our Head Chef and Proprietor Nick Deverell-Smith and his team in the kitchen push these to the next level. The Churchill Arms Head Chef and Proprietor Nick Deverell-Smith has more than 15 years of experience in award-winning restaurants across the country After working locally at top restaurants like Simpsons in Kenilworth and Mallory Court and then in London under Gordon Ramsay, Marcus Wareing, and most influentially Eric Chavot, The Churchill Arms' menu shows his skill for creating fantastic dishes. Born and brought up in Warwickshire, Nick left school at 15 to study at the Birmingham College of Food, going on to win Junior Chef of the Year. Fired up with confidence from that recognition, he went to work at Simpsons in Kenilworth under Andreas Antona. He was part of the now internationally renowned brigade, which included Glynn Purnell, Marcus Eves and Andy Walters during the time that the restaurant became the first Michelin starred in the area. From there to Mallory Court for two years where he was selected for and went on to become a Gordon Ramsay Scholar. His signed Chef’s jacket has prime position outside the kitchen at The Churchill Arms. That took Nick to London training under Gordon Ramsay and Marcus Wareing before he took a permanent position with Marco Pierre-White. Nick’s next career move was perhaps the one that influenced him most, working alongside Eric Chavot. Based predominantly at the Capital Hotel in London, his work with Chavot also took him to France as his Sous Chef at the boutique hotel Le Chalet Blanc. After three years absorbing everything he could Nick moved on to become Head Chef of The Restaurant at Soho House. Over the last few years he has worked throughout the group including heading up the kitchens at Dean Street Townhouse before opening The Churchill Arms here in Paxford in February 2015. Our local suppliers sit at the centre of what we do We use three main sources all within 10 mile radius. The one exception though is our fish. With the Cotswolds lack of coastline it comes up daily from Cornwall from Flying Fish. Beautifully fresh fish that is responsibly sourced arriving from their boats on to our plates within 48 hours.
