  • The placement will focus on working in our award-winning restaurant. Training and supervision will be given ‘on the job’
  • Students will learn how a successful fine dining restaurant operates, as well as gaining further knowledge of wine and English cheeses
  • There will be an opportunity to have insight into business meetings, events, weddings, and private dining functions which are held at Baslow Hall
  • In the course of the placement, there will be a limited time spent in reception and housekeeping in order to get a full picture of the business

Desired qualifications

  • A good standard of English and Maths, ideally grade C/4 or above (or the equivalent)
  • You may be able to study towards equivalent qualifications if you have not achieved these alongside your apprenticeship, dependant on personal circumstances

There is potential for permanent employment on sucessful completion of your apprenticeship.

Due to our rural location your own transport is advisable, however limited bus services are available.

Basic accommodation can be provided at Baslow Hall, depending on availability.

THE KITCHEN 

Following in the footsteps of Executive Chef Max Fischer, the kitchen team have retained many accolades including Three AA Red Rosettes, Four AA Silver Stars, and listings within the Good Food Guide, and the Good Hotel Guide. 

Head Chef James Payne combines classic favourites with more modern combinations and relies heavily on seasonal, local and British produce. An abundance of micro herbs, fruits and vegetables are grown in the Baslow Hall gardens for use in the kitchen. 

THE RESTAURANT

General Manager John Cooper, Restaurant Manager Adrian Tinis and Sommelier Matthew Davison, oversee the Front of House with an emphasis on high levels of customer care. 

The dining room is classically set, crisp white table cloths and napkins, polished silver cutlery and gleaming glassware. Dining ambience and food service is an important part of the experience, so it is important we spend time building knowledge with regular training sessions such as coffee, foraging, wine and food tastings. We employ a young dynamic front of house team.
