Within this role you will gain skills and qualifications pivotal to becoming a chef. Working in a fast paced environment you will gain hands on experience in the day to day duties involved in working in a professional kitchen. This varied role won't limit you to working in one kitchen, you will work in the Savile restaurant, the Coach House Café and also cater for weddings and events on site, enabling you to gain a wide range of skills and qualifications across 3 different catering outlets.

Duties and topics covered across the role will include:

- Al a carte and fine dining
- Modern cooking techniques
- Roasting and braising techniques
- Knife skills
- Plating and presentation skills
- Preparing stocks, soups and sauces
- Dealing with deliveries, stock control & ordering
- Assisting on prep days and preparing ingredients for senior staff
- Baking and homemade desserts
- Preparing meat, fish and poultry

The post holder will be able to demonstrate strong organisational and team working skills. They will have a good general knowledge of ICT packages and demonstrate a good level of spoken and written literacy.

Things to consider

Candidate must be able to travel to the workplace according to working hours and be willing to work public holidays in accordance with the role. The current National Minimum Wage for an apprentice is £3.50 an hour. This rate applies to apprentices under 19 and those aged 19 or over who are in their first year. Apprentices must be paid at least the minimum wage rate for their age if they are aged 19 or over and have completed their first year. The minimum wage rates are £5.60 an hour for 18-20 year olds and £7.05 for anyone aged 21 and over. Apprentices are paid for their normal working hours and training that’s part of their apprenticeship (usually one day per week).

About the employer

Rufford Abbey Country Park is the estate and grounds of a former 12 century Cistercian Monastery and country house. One of the main country parks that make up the broader Sherwood Forest area, the attraction is popular with visitors throughout the year. There are two places to eat and drink at the main area of Rufford Abbey, the Coach House cafe is located in the main courtyard and the Lord Savile's Kitchen can be found at the back of the abbey near the entrance to the gardens.

Training provider

Professional Cookery diploma Level 2 - 12 months • Level 2 Diploma in Professional cookery • Functional Skills English, Maths and ICT Level 1 if required This apprenticeship is 1 day per month at the college term time only 9am - 5pm with the other days based at the work place. Training will be day release one day a month to Trent Bridge Cricket Ground training kitchen.
