Summary

One Garden Brighton is a busy tourist destination in Stanmer Park. We are looking for an apprentice who will work and learn in a fast-paced environment and gain a variety of bakery skills. You will ensure the high presentation of food and retail products and support our head baker with daily tasks.

Hours of work will vary but bakery shifts traditionally start earlier in order to utilise the kitchen outside of key operational hours when it is quieter. A typical shift runs from 7.00am to 3.30pm, but this will vary according to business need.

Work

Most of your apprenticeship is spent working. You’ll learn on the job by getting hands-on experience.

What you'll do at work

You will undertake a variety if tasks, and be responsible for: 

  • Working under our Head Baker to create exceptional products for our guests.

  • Engaging with customers and promoting the products on offer.

  • Ensuring the high presentation of food and retail products that will consistently exceed our customer/visitor expectations.

  • Supporting the Head Baker with daily tasks whilst learning daily production routines.

  • Working proactively alongside colleagues to promote the organisational values.

  • Champion, embrace & prepare Plumpton Estate produce, meat and dairy, utilising produce from our Market and Gardens when available

  • Ensure kitchen and wash-up areas are kept in a clean and hygienic condition.

  • To keep up to date with food safety guidelines and legislation to ensure compliance and customer safety.

  • Comply with food hygiene regulations by completing relevant food safety records and wearing the appropriate protective clothing while preparing/serving food, and to ensure all other members of staff do likewise.

  • Ensure that all stock is stored appropriately and stock rotation procedures are followed, with guidance from the Head Baker.

  • Ensure that any stock issued to other departments is recorded to enable stock records to be kept, and assist Head Baker with stocktaking procedures.

  • Highlight any learning needs that you may have and participate fully in opportunities for professional development.

  • Assist the Head Baker in placing orders and checking in deliveries, undertaking manual handling (with training) when necessary.

  • Other duties connected to the role may be required from time to time.

  • Select, prepare/set-up and use equipment and machinery.
  • Clean and check tools and equipment.
  • Monitor materials/stock levels and controls for example, first in first out, temperature and environment.

  • Store finished goods.
  • Package and label bakery products for example, allergens.
  • Comply with health & safety, food safety, environmental procedures, PPE, hygiene and method statements.
  • Clean and tidy work area. Dispose of waste and recycle.
  • Communicate verbally for example, with colleagues, suppliers and customers.
  • Record information - paper based or electronic.
  • Identify bakery product problems/faults and underlying causes.
  • Read and interpret information for example, specification, recipe and production plan.
  • Plan bakery tasks.
  • Prepare for bakery tasks. Obtain materials.
  • Prepare ingredients.
  • Weigh or check weight of ingredients/products.
  • Mix ingredients.
  • Deposit, scale or cut/divide mixture.
  • Mould products.
  • Monitor prove.
  • Pre-bake and/or post-bake dressing of product.
  • Operate ovens.
  • Craft baker. Scale up/down a recipe using percentages.
  • Craft baker. Prepare and apply fillings/coatings.
  • Plant baker. Follow product changeover procedures.
  • Plant baker. Check product specifications throughout the key process steps; identify and rectify or report production issues.
  • Retail baker. Serve customers for example, determine customer’s needs, provide information, offer options and match bakery products to customers’ needs. Sell to customers for example, promote complementary items, promotional offers or seasonal products.
  • Retail baker. Display and replenish bakery products.

Training schedule

Training will ocur as in-person learning at Plumpton College and online, alternating weekly with one week in person and the next week online. This will only occur during term time. 

Requirements

Desirable qualifications

GCSE in:

  • English (grade 4)
  • Maths (grade 4)

Share if you have other relevant qualifications and industry experience. The apprenticeship can be adjusted to reflect what you already know.
