    The current National Minimum Wage for an apprentice is £3.50 an hour. This rate applies to apprentices under 19 and those aged 19 or over who are in their first year.
    Apprentices must be paid at least the minimum wage rate for their age if they are aged 19 or over and have completed their first year.
    The minimum wage rates are £5.60 an hour for 18-20 year olds and £7.05 for anyone aged 21 and over.
    Apprentices are paid for their normal working hours and training that’s part of their apprenticeship (usually one day per week).

The assistant fishmonger will work in a small team in a new and expanding smokehouse supplying Michelin Star chefs & restaurants, with lots of prospects to gain skills and knowledge as part of their fish and shellfish intermediate apprenticeship as and when appropriate.

As an Assistant Fishmonger you will be able to take in deliveries of fish and from suppliers, prepare the fish for curing and help to sell to customers out the front of the smokehouse on a Saturday or at a farmers market [Saturday].

A good knowledge of the range of smoked fish sold by the business will become second nature to you as you work through your apprenticeship programme. You will also learn how to handle and prepare fish and deal with customer enquiries, clean and maintain hygiene (to HACCP and EC number level) and contribute to the success of this small, modern business.

You will be fully trained in all aspects of your job role and there will be some flexibility within your apprenticeship to tailor your programme. You will work closely with the head smokers (owner of the business) to learn the meticulous process of smoking fish at this level.

As part of an intermediate apprenticeship you will also achieve qualifications in English and Maths.

Qualifications required

Preferably a minimum of GCSE English & Mathematics grade A*-C and above or equivalent.

Future prospects

To complete an Intermediate Fish and Shellfish Apprenticeship, possibly leading to an Advanced Apprenticeship (management level) at a later date. To complete a qualification in Food Safety. The Apprenticeship will provide some flexibility and an opportunity to undertake some specialist unit if you have a particular interest to explore. Opportunities may arise in the future to take on a management role within the business or even to run your own business.

Things to consider

The successful candidate will be required to achieve an extremely high level of skill in the hand preparation of fish. All fishmongers are expected to handle wet fish, serve customers, and clean as they go (HACCP level and to meet EC number compliance) in a shop which is usually unheated.
