There is a daily menu made with locally sourced ingredients where possible and a specials board. Also available are coffees, pastries and a range of homemade indulgent puddings.

As part of your apprenticeship working within the team at The Black Swan you will gain skills in:

  • Preparation and cooking of hot and cold dishes for the menu
  • Completion of kitchen documentation
  • Food Safety and Health and Safety
  • Kitchen opening and closing procedures
  • Assisting with themed event catering
  • Assisting with development of menu for restaurant

On completion of this Apprenticeship there may be opportunity for the right candidate to remain in a permanent role within the business and develop their level of responsibilities. This is a growing organisation looking for an apprentice to grow with them.

Things to consider

Individuals who already hold a Level 4 qualification are only eligible for a Level 5 or above Higher Apprenticeship and are not eligible for funding for an Intermediate Level, Advanced Level or Level 4 Higher Apprenticeship. If you hold a degree you are not eligible for Apprenticeship funding, please contact us to discuss this further.

As part of this Apprenticeship you will undertake the following:

Professional Cookery Diploma Level 2

Mandatory units within the Diploma:

  • Unit 101- Maintain a safe hygienic and secure working environment
  • Unit 102 - Maintain, handle and clean knives
  • Unit 104 - Working effectively as part of a hospitality team
  • Unit 203 – Maintain food safety when storing, preparing & cooking food
  • Plus optional units, such as Prepare poultry for basic dishes, cook and finish poultry dishes, complete kitchen documentation, prepare, cook and finish basic pastry products
  • Level 2 Certificates Hospitality and Catering Principles
  • English, Maths and ICT Functional Skills (if required)
  • Employment Rights and Responsibilities (ERR
  • Personal Learning and Thinking Skills (PLTS)
