A primary objective of the commis chef is to learn and understand how to carry out the basic functions in every section of the kitchen. This gives them the opportunity to experience, consider and value each section with a view to choosing an area where they feel most inspired.
The learning journey of a chef will vary considerably from one individual to the next; however, it is the range of experiences in the basics gained in this role that provide the opportunities to progress to any future senior chef role.
Duties will include:
- Assisting in the food preparation process
- Preparing meats, fish and veg
- Keeping kitchen clean and sanitized
- Assisting other chefs
- Helping with deliveries and restocking

Personal qualities
You enjoy a task-based environment- you motor through head chef prep lists with uncanny efficiency. Customers get their food on time, every time!
A keen eye for detail. Every plate of food must be of the same great quality. You dislike sloppiness.
You enjoy food and have a solid knowledge of ingredients and flavours.
You are adaptable to new menus and new ideas. Head chefs will always be experimenting and plotting new creations, and they will need your help to execute every menu with each new season. There is room for your input if you have a passion to contribute and learn.
You are a hardy soul who enjoys physical work in a hot and fast environment.

Progression from this apprenticeship is expected to be into a chef de partie role or senior production chef role.
Things to consider
£18k-£21k PLUS £1,500 incentive payment on completion of apprenticeship
40 hours for individuals aged 16-17
45-48 hours for individuals aged 18+
