We are looking for an ambitious apprentice to join our kitchen team. We run two restaurants “Witham and Blues” and “V-ATE”, one is a steak house and grill and the other is a smoke house. Both make dishes from scratch using locally sourced ingredients. We also make our own desserts. The role will involve training within both restaurants.

The succesful candidate will work within both of our busy restaurants that sit side by side. You will work under both kitchen's Head Chefs alongside our team of experienced sous chefs. Key responsibilities to include preparation of ingredients, following chef's recipes for dishes, preparing food during service, keeping up high standards of hygiene, cleaning. You will report to our Head Chefs and our General Manager.

Minimum English and Maths GCSE Grade E/2 or above or equivalent

Future prospects

We are looking for our chefs of the future, we offer great rates of pay during your apprenticeship and also once you become a fully trained chef. Our hope is that you will want to stay with us long after your apprenticeship ends. We pride ourselves on being excellent employers and will do everything in our power to help you to succeed. We aim to franchise “V-ATE” in the coming years and hope to train our head chefs of the future in house.

Things to consider

This job involves long and anti-social hours. Both of our kitchens run at high speed. Witham and Blues serves 16 guests every 30 minutes whilst V-ATE serves 20 every 30 minutes. This is a very rewarding but hard job. We would require the successful candidates to study for additional Food Safety Qualifications.

Training provider

The Apprenticeship framework consists of several elements which have been identified by employers as the skills you need if you want to find work in the Catering and Hospitality industry.

These elements are: 

  •  Level 2 NVQ Diploma .
  • Technical Certificate Level 2 Certificate in Hospitality and Catering Principles.
  • On some frameworks, the knowledge and competence elements are combined into one qualification.
  • Maths - Level 1 or Level 2 Functional Skills, unless an equivalent qualification has already been achieved.
  • English - Level 1 or Level 2 Functional Skills, unless an equivalent qualification has already been achieved.
  • ERR - Employee Rights and Responsibilities, which includes health and safety, equality and diversity as well as employment legislation.

Working alongside experienced head chefs and Sous Chefs to gain essential work experience and training. You will also attend one day per week in College to increase knowlegde and skills.
