    Wages explained

    The current National Minimum Wage for an apprentice is £3.50 an hour. This rate applies to apprentices under 19 and those aged 19 or over who are in their first year.
    Apprentices must be paid at least the minimum wage rate for their age if they are aged 19 or over and have completed their first year.
    The minimum wage rates are £5.60 an hour for 18-20 year olds and £7.05 for anyone aged 21 and over.
    Apprentices are paid for their normal working hours and training that’s part of their apprenticeship (usually one day per week).

    Working days every week would be Tuesday, Wednesday, Thursday, Friday, Saturday. 08.30hrs to 17.30hrs every day. Monday and Sunday would be days off.

Key Responsibilities

  • To promote home and locally produced meat and game, and to comply fully with Middle Farm standards of sell-by/use-by dates, temperature checks, quality control, stock rotation, attractive stock display and the highest level of customer care.
  • To always contribute to the improved performance of the butchery department.
  • To be a supportive team member always treating other team members and customers with fairness and courtesy.
  • To be punctual, polite and professional at all times.
  • To fully comply with Health and Safety and Food Hygiene legislation at all times, strictly adhering to cleaning schedules.
  • To minimise business costs and be at all times environmentally responsible with regard to waste and resources.
  • To ensure that the retail area, including windows, walls, fridges/freezers, light switches etc. are thoroughly cleaned on a regular rota, strictly adhered to.

  • Assiduous rotation of stock, according to date and prompt re-stocking of shelves and displays as needed, ensuring that the last hour of each day is spent filling the shelves ready for the following day.
  • Maintaining clean, tidy and safe environment at all times for customers and fellow team members.

Things to consider

The candidate will be expected to be involved in all aspects of the job of a butcher including lifting of heavy animal carcasses, strenuous cutting and chopping. Working with all parts of an animal carcass to prepare cuts of meat.

About the employer

Middle Farm is a tenant farm forming part of the Firle Estate owned by the Gage family. The tenancy has remained within the same family for over 50 years, passing down through the generations, diversifying and reflecting changes in the farming industry along the way. Today the farm is home to the Pookhill herd of Jersey cows who contentedly graze our fields and meadows during spring and summer. The fresh Jersey milk from our dairy herd is available to buy in our farm shop together with delicious Jersey cream and ice cream. Our beef herd enjoy the same high standards of animal welfare and mature slowly on a grass fed diet, which we believe reflects in the quality of our meat which is sold in the Middle Farm butchery. Arable crops are also grown on the farm and a strong emphasis is placed on the care of our environment and the wildlife within it. Our traditional butcher specialises in additive-free meat and poultry, including our own home-produced, grass-fed beef (hung for up to 60 days!), as well as our famous tomahawk steaks, pork and lamb. To supplement what we rear ourselves we buy in from other local Sussex farms. We also make 20 different varieties of sausage seasonally and hold a wide range of cured bacon and other charcuterie. In season we also sell local game, such as venison, pheasant, rabbit, pigeon and wild boar. At Christmas we supply free range poultry including Sussex turkeys, Suffolk/Norfolk geese and ducks & chickens from Surrey. We care passionately about the quality of produce and service within our farm shop and have, for more than fifty years, grown, raised, made and selected only the finest meat, cheese, dressings, pickles & preserves, ice-cream, seasonal fruit & vegetables and even confectionery from like-minded small-scale producers. We are proud to hold more Sussex produce than any other retailer anywhere as we source locally whenever and wherever possible. The National Collection of Cider & Perry is a unique celebration of our national fruit. Visitors can taste, compare and buy from a range of over 100 different draught ciders and perries (including our own Pookhill Cider).As well as a huge range of meads, country wines and fruit liqueurs, the Collection holds a carefully selected range of draught and bottled ales. We also stock English cider brandies, apple gin, apple vodka and apple eaux-de-vie. Fresh apple juice is pressed daily and an apple-pressing service is offered throughout the late summer and autumn. Our Open Farm is home to some of the friendliest farm animals around and is open every day to the public. We have rabbits and guinea pigs, rare breed chickens, pigs, goats, llamas, sheep and the visitors can watch the cows being milked every afternoon. We have a picnic area, and a nature trail around the farm as well as two outdoor playgrounds and a hay play barn.

Training provider

Level 2 Standard Butchery Apprenticeship at Plumpton College, Ditchling Road, Plumpton, East Sussex, BN7 3AE  and at the Butchery School in Robertsbridge.

The candidate will be employed, earning a monthly wage whilst working towards the Level 2 qualification and additional qualifications in Food Safety and Health & Safety. There is the chance to take part in several field trips including visits to a livestock market, farms and some benchmark businesses. The apprenticeship also includes membership to the prestigious Institute of Meat.

The candidate will attend the butchery school at least once a month and supportive tutors will continue to visit them at the workplace. Courses start three times a year, entry is by interview.
