Vacancy description

We are looking for an enthusiastic apprentice to work under our executive chef.

You will also be undertaking a Professional Chef qualification with assessment from Brockenhurst College to develop your skills.

  • The ability to take initiative and importantly show commitment to work in a team and communicate at all levels is essential.
  • Learning prep and cooking will enable you to learn on the job and develop your skills to professional chef standard.

Varied duties will cover all aspects of kitchen operations to produce quality food:

  • Food prep
  • Knife skills for preparation of fish including presentation, using, cleaning and maintaining kitchen utensils and equipment, fridges and cookers, stock handling, cleaning and general chef support.
  • Communication skills will be needed to work within a high pressured service team, plus a sensible approach to hygiene, health and safety.
  • Commitment and respect to one's self, customers and colleagues is paramount with a pleasant and approachable attitude.

Future prospects

Opportunity to develop as a Commis chef, Chef de Rang progressing to Chef de Partie and Sous Chef in our fabulous new hotel at the centre of Hampshire cricket at the Ageas Bowl. This role will appeal with those that have a passion for preparing a fresh local menu for our visiting guests.

Things to consider

The current National Minimum Wage for an apprentice is £3.50 an hour. This rate applies to apprentices under 19 and those aged 19 or over who are in their first year. Apprentices must be paid at least the minimum wage rate for their age if they are aged 19 or over and have completed their first year. The minimum wage rates are £5.60 an hour for 18-20 year olds and £7.05 for anyone aged 21 and over. Training provider

The successful candidate will undertake an Intermediate Apprenticeship including both on and off the job training. Training will be carried out by Brockenhurst College at the employer premises in Brook An Intermediate Apprenticeship in Professional Cookery:

  • Level 2 City and Guilds Certificate in Professional Cookery
  • Technical Certificate Level 2
  • Functional Skills in English Level 1,and Maths Level 1
  • Employment Rights and Responsibilities Award in the Hospitality Industry

Training will be part of the contracted hours agreed that makes up the working week. The Head Chef and Kitchen team will support the Apprentice with inhouse training and development.
