Main Duties

Financial

  • To maximise average spends through using effective up-selling techniques as appropriate.
  • To understand daily departmental costs and how they influence profit and loss results.
  • To ensure the procedures for movement and security of stock are maintained at all times.
  • To ensure that billing and till procedures are maintained at all times.

People

  • To participate in training and development for Food and Beverage procedures and product knowledge.
  • To develop a close working relationship with all departments, colleagues and managers to ensure guest expectations are met.
  • To develop rapport with all customers in order to maximise sales opportunities and generate business for the future.
  • To co-operate with all members of the team to provide the best possible service and product.
  • To assist with training within the department when needed.
  • To participate fully in departmental briefings and meetings.
  • To assist in maintaining a positive culture throughout the department.

Service and Product

  • To be on shift in good time for service, and to provide a focal point for our guests.
  • To ensure knowledge of products, services procedures and shift information.
  • To ensure effective daily communication with other team members, Reception, Meetings and Kitchen.
  • To maintain levels of service that consistently exceeds the expectations of our guests.
  • To be aware of ambience and the standards of service within the department, and to work to the Standard Operational Procedures at all times.
  • To ensure the standards of maintenance and cleanliness within the Brasserie is maintained at all times.

General

  • To ensure all statutory regulations are adhered to, and to ensure that liquor procedures are upheld as per the conditions of the liquor licenses.
  • To undertake any reasonable requests made of you by the company including flexibility in hours, location and responsibilities.
  • To work to the Malmaison Priorities.
  • Be willing to help other departments of the hotel wherever possible and to understand the flexibility required when business levels peak and trough, to deliver the best possible service.
  • To ensure that all personal statutory regulations are observed and that you comply with these requirements.
  • To comply with all policies and procedures as written in the staff handbook Filofacts.

Things to consider

The role will require both evening and weekend work. Please bear this in mind and ensure you can get to and from the location at a variety of times. Please note the wage will be £7.50 p/hr and will vary depending on shifts worked. You will also have the ability to earn service charge on shift.
