The Balmer Lawn Hotel together with Brockenhurst College are looking to select a Front of House Apprentice to work in our busy hotel bar alongside our Bar and Restaurant Supervisors whilst learning at the same time with your Food and Beverage Services qualifications which will be work based through Brockenhurst College.

You will assist the Bar Supervisor and other hotel staff in the organisation of the bar and service of food and drinks: cocktails, wines, spirits and hot and cold beverages for corporate events, conferences, weddings and private parties as well as our regular diners and be expected to adopt a wide range of knowledge and expertise to deliver excellent service to our guests.


  • To be fully conversant with every bar menu item, such as cocktails, wines and spirits.
  • Alcohol content awareness is important
  • To ensure that all customers needs and wishes are met efficiently in the preparation of drinks so far as is reasonably possible especially with allergies and dietary needs of customers.
  • Maintaining good hygiene
  • To ensure that you attend all training, briefings and meetings, and College assessments.
  • To be fully aware of and adhere to the Bar and Restaurants food safety, fire safety procedures and health & safety regulations.
  • Communication skills will be needed to work within a high pressured service team, plus a sensible approach to hygiene, health and safety.
  • Commitment and respect to ones self, customers and colleagues is paramount with a pleasant and approachable attitude.
  • An ability to communicate to colleagues is also important and to work as a team.

Working week 30 hours: Tuesday to Sunday Split shifts covering Day shift 11am to 4pm and evening 6pm until 11pm

Qualifications required

Food Hygiene, First Aid or waiting service experience would be desired but not essential as full training given

English and Maths GCSE A-C grades or equivalent are desired but not essential if can commit to undertake Functional Skills Level 1 achievement within your Apprenticeship

Apprenticeship National Minimum Wage (ANMW): The National Minimum Wage for Apprentices is £3.40 per hour from 1st October 2016. This is the legal minimum pay per hour applying to 16-18 year old apprentices and those aged 19 and over in the first year of their apprenticeship. For apprentices 19 or over who have completed their first year and are continuing their apprenticeship, the National Minimum wage appropriate to their age applies.

Family owned 4* hotel situated in Brockenhurst. The hotel comprises of 55 bedrooms, 6 conference rooms with maximum capacity of 120, 1 Rosette awarded Beresfords Restaurant and recently refurbished lounge and terrace open all day to residents and non-residents.

Training provider

The successful candidate will undertake an Intermediate Apprenticeship in Food and Beverage Service for these Front of House roles- including both on and off the job training.

Training will be carried out by Brockenhurst College at the employer premises.

An Intermediate Apprenticeship in Food and Beverage Service comprises of the following:

  • QCF Diploma Level 2 City and Guilds in Hospitality
  • Technical Certificate
  • Functional Skills in English Level 1
  • Function Skills in Maths Level 1
  • Employment Rights and Responsibilities
  • Hospitality Industry Certificate

Training will be part of the contracted hours agreed that makes up the working week.
